The BEST Gluten-Free Brownies

These are my fav sweet treat I've ever made, not for the faint-hearted, the sugar and butter content is high. Therefore should be eaten in my opinion as a one-off treat!

  • 115g gluten-free self-raising flour (i use D0ve Farm)

  • 175g salted butter

  • 300g caster or golden caster sugar

  • 65g cocoa powder

  • egg beaten

  • 2tsp vanilla essence

  • Pinch salt

Extras: choc chips, pecans, hazelnuts, cherries - whatever you fancy adding really!

EXTRA Extra: Swirl in warmed up peanut butter and swirl it in pre-bake!

  1. Preheat the oven to gas mark 4, grease and line your baking tray.

  2. Melt the margarine in a saucepan over a medium heat, careful not to let it boil.

  3. Add the cocoa to the melted margarine and stir until dissolved.

  4. Add the sugar and stir until the mix becomes thick.

  5. Lightly beat the eggs, salt and vanilla together and add to your mixture.

  6. Add in the flour and once combined pour into the greased baking tray.

  7. Create your perfect topping, mine is peanut butter or hazelnuts.

  8. Bake in the oven for 20 - 25 minutes or until risen and the centre has a slight wobble (it really does wobble but don't worry!).

  9. Leave to cool before cutting into 12 slices.
